Corn, Tomato and Avocado Salad

This salad needs few words. Simply put it was easy and Yummy!!!

Serves 6



3 avocados, diced
4 ears of fresh corn, cut off the cob
1 pint of cherry tomatoes, halved
1/3 cup minced red onion
juice of 2 lemons
4 tablespoons extra virgin olive oil
salt and pepper.

Assemble all ingredients in a large bowl, toss and serve.
