I don't know about you but when ever I get a craving for BBQ chicken I usually ignore it. Why, you ask? Because I usually end up under cooking the chicken or burning it. Which leaves me with doing it in the oven and that can be messy. Besides when it's hot, the oven is the last thing I want to turn on, even with air conditioning. So what is a girl to do? Whip out the slow cooker. This recipe is so easy it practically cooks itself and it tastes like you spent hours preparing it and babying it on the grill.
6-8 boneless skinless chicken breasts(mine were from a pre-historic chicken so I halved them)
1 bottle of your favorite bbq sauce
1/4 cup apple cider vinegar
2-4 tbsp olive oil
bbq rub(yours or mine)You will have left overs so store it for your next bbq
1/2 cup brown sugar-packed
3 tsp kosher salt
2 tbsp each of chili powder and smoked paprika
1/2 tsp each of garlic powder, onion powder, dried thyme, chipotle chili powder, black pepper
Place all the rub ingredients in a small bowl and mix well. Rub both sides of each breast with some of the rub. Heat the oil in a large skillet over medium/high heat. Brown the breasts in batches on both sides. Spray the insert of your slow cooker with cooking spray. Pour a small amount of bbq sauce and the vinegar onto the bottom of the insert. Lay the chicken breasts in the insert, piling them up. Pour the rest of the sauce over all, cover and cook on high for 4 hours. Serve by themselves or on buns for a bbq chicken sandwich.
Cook's Notes- Don't skip the browning step. Browning the chicken in a skillet, caramelizes the brown sugar. This gives the chicken its grilled taste and appearance.
