I had a couple of packages of Foster Farm's Grilled Chicken that I needed to use. Chicken salad instantly sprang to mind. I don't make it very often as I don't often have extra chicken lying around. But today was my luck day.
2 packages of Foster Farms Grilled Chicken or 3 cups leftover chopped chicken
1/3 cup dry apricots, diced
1/2 cup slivered almonds
3/4 cup diced celery
3 green onions, diced
1/2 cup fat free greek yogurt
1/3 cup light mayo
salt and pepper
3 tblsp champagne vinegar
1/2 tsp fresh minced tarragon
Place all in a bowl a bowl and mix until well combined. Place on plates lined with lettuce or make a sandwich with whole wheat bread, top with sprouts if desired.
