Black Rice Salad with Mango and Oranges

Fruit is often overlooked in savory salads. Here mangoes and oranges add a sweet contrast to the black rice. Almonds add a crunchy element.



3 cups cooked black rice(I get mine at Sprouts)
1 15oz can of mandarin orange segments, drained
2-3 ripe mangoes, peeled and cubed
1/2 cup minced italian parsley leaves
4 green onions, thinly sliced
1/2 cup sliced toasted almonds
juice of 2 large oranges
2 tbsp dijon mustard
1 tbsp brown sugar
1/4 extra virgin olive oil
salt and pepper

Toss the rice, mandarin oranges, mangoes, parsley, green onions and almonds in a large bowl. In a small bowl mix together the orange juice, mustard, brown sugar, olive oil, salt and pepper. Pour over the salad and toss. Serve
