Slow Cooker Turkey Meatloaf

My daughter wants to take my meatloaf recipe back to school with her in September but mine is done in an oven. We experimented today with the slow cooker to see if we could adapt it. Here's what we came up with.



2 pounds ground lean turkey
4 slices of bread
2 beaten eggs
1 onion
1 red bell pepper
5 oz mushrooms
2 cloves garlic
1tsp dry thyme
2 tsp kosher salt
1/2 tsp black pepper
4 tbsp worcestershire sauce(the thick kind)
3 oz tomato paste
1/2 cup bbq sauce(I used Stubb's Original)
2 tbsp brown sugar
2 tbsp water



Place the meat in a large bowl. Grind the bread in a food processor and add it to the meat. Grind the onion, bell pepper, mushrooms and garlic in the food processor and add that to the bowl. Mix in the egg, thyme, salt, pepper and 2 tbsp of worcestershire sauce. Line the insert of 6 quart slow cooker with foil. Spoon the meat into the insert and press to form. In a small bowl mix together the remaining worcestershire sauce, tomoato paste, bbq sauce, brown sugar and water. If the sauce is too thick add a bit more water until it reaches the desired consistency. Pour the sauce over the meat and spread to cover the top. Put the lid on and cook for 4 hours on high.
