Skinny Potato Casserole

Who doesn't love a good potato dish? Who doesn't love a skinny potato dish? I raised my hand to both. I used frozen hash browns to start this dish. This little helper will allow me to get dinner on the table in a half an hour on a busy week night.




1 large pkg of frozen hash browns
1 large onion, diced
2 cloves of garlic, minced
1/3 cup minced fresh italian parsley
1 cup fat-free greek yogurt
1 cup chicken stock
1/2 cup light mayo
2 tbsp olive oil
1 1/2 cups low-fat shredded cheddar cheese
salt and pepper

Place the potatoes in a strainer and run warm water over them, just enough to defrost. Place the potatoes in a clean kitchen towel and squeeze all the water out of them. Preheat the oven to 350 and spray an oblong baking dish with cooking spray. Place the potatoes into the baking dish. Sprinkle with salt and pepper. Heat the oil in a large skillet over medium/high heat. Add the onion and garlic. Sprinkle with salt and pepper. Saute until the onion is translucent, about 5 minutes. Add the onions to the potatoes. Sprinkle the parsley over the top. Add the yogurt, mayo, chicken stock and 1 cup of the cheese. Mix well. Adjust seasoning if necessary. Bake in the oven for 30 minutes. Sprinkle the remaining cheese over the casserole and bake 5 more minutes. Serve.
